Smoked salmon & poached egg + greens

Happy Thursday guys! Hopefully this simple and healthy recipe makes up for the absence. Every once in a while, I flip through a new cookbook and think to myself, “Well I wish I had thought of that or that…and how did I not think of that before?!”. Anyway, this recipe is part of an ongoing effort to improve my skills in making poached eggs. The last time I made a poached egg it look like a fried turd 🤣. I think I’ve mastered the poached egg this time.

SERVING FOR 2

INGREDIENTS

  • 4 slices smoked salmon
  • 4 slices of grain bread
  • 1 pound green bean, ends trimmed
  • Olive oil
  • 10 wild rocket leaves
  • Parmesan, grated
  • Butter
  • Salt & peppers, to taste

PREPARATION

  1. Dry green beans well and spread on a rimmed baking sheet. Toss with olive oil (use your hands), so that all the beans are coated. Sprinkle with salt, pepper. Toss again to coat.
  2. Roast for 10 minutes, at 200°C, toss, and continue to roast for 5 more minutes. Immediately sprinkle with parmesan and put aside.
  3. Heat a medium-sized skillet over medium heat, and put butter, toast the bread directly in the pan, 1-2 minutes per side. I use non-stick pan.
  4. Toss wild rocket, place breads on a plate, top with wild rocket, roasted green beans, smoked salmon and poached eggs. Sprinkle salt, pepper and olive oil.
