I’m gonna make a quick post about my dinner tonight. It was unexpected, I just take a few photos and think why not post about it. Therefore, sorry for the shitty quality pictures.
I must say, I’m quite happy with the recipe, it’s doesn’t have this tangy smell or taste, trust me. I also thought it might taste weird but it’s not. Plus it’s easy to make, so why not I give it a try. When you have a hectic schedule but still want to eat healthy, this is perfect for you. So, let’s get started!
SERVING FOR 1
- Romaine Lettuce, chopped
- Garlic grated
- Fresh oregano
- Mango chutney
- Half chilli bell, diced
- Chicken breast
- 1 potato, cubed
- Feta cheese
- Salt & pepper, to taste
- Olive oil
- Lemon juice
- Mix the potatoes, chilli bell, chicken breast in one pan and season with olive oil, salt, pepper, grated garlic, mango chutney, fresh oregano and let it sit for 20 minutes.
- Bake for 30 minutes, at 180°C, until sets.
- Meanwhile, combine chopped romaine, avocado, feta cheese, drizzle with olive oil, salt, pepper and squeeze a little bit of lemon.
- Place salad on a plate with chicken breasts on top. Walla!
