Mango chutney chicken breast + greens

I’m gonna make a quick post about my dinner tonight. It was unexpected, I just take a few photos and think why not post about it. Therefore, sorry for the shitty quality pictures.

I must say, I’m quite happy with the recipe, it’s doesn’t have this tangy smell or taste, trust me. I also thought it might taste weird but it’s not. Plus it’s easy to make, so why not I give it a try. When you have a hectic schedule but still want to eat healthy, this is perfect for you. So, let’s get started!

SERVING FOR 1

INGREDIENTS

  • Romaine Lettuce, chopped
  • Garlic grated
  • Fresh oregano
  • Mango chutney
  • Half chilli bell, diced
  • Avocado
  • Chicken breast
  • 1 potato, cubed
  • Feta cheese
  • Salt & pepper, to taste
  • Olive oil
  • Lemon juice

PREPARATION

  1. Mix the potatoes, chilli bell, chicken breast in one pan and season with olive oil, salt, pepper, grated garlic, mango chutney, fresh oregano and let it sit for 20 minutes.
  2. Bake for 30 minutes, at 180°C, until sets.
  3. Meanwhile, combine chopped romaine, avocado, feta cheese, drizzle with olive oil, salt, pepper and squeeze a little bit of lemon.
  4. Place salad on a plate with chicken breasts on top. Walla!
